Stuttering with Elgato 4k60 mk.2/PS5

Hey I've been trying to record gameplay and have noticed moments where the FPS drops.
This only seems to be an issue with the output video, as while I do notice slight drops in certain games, it looks a lot more obvious after recording has finished.

I have tried both the 60 and 59.94 common FPS values but no joy there.
I have also tried buffering on and off but I haven't noticed it making a difference.
I have used both simple and advanced output menus. (changing the bit rate settings on recording to CQP seemed to help a little but I may just be imagining it.)

There is also the possibility that I am overthinking this, but I want to improve anything I can.

Hey all, not sure if this will be of any interest to anyone but I may have found a solution ( I haven't done extensive testing yet, but atm it's pretty good).

So I went into the Elgato 4k capture utility. The EDID Mode of my capture card was set to 'Merged'. I changed this to 'Display'.
Leave the EDID (Internal) set to default

The sound was a little different but I fixed that by going into the PS5 settings and changing the sound from Dolby to Linear PMC
