So I found a temporary solution to my problem for obs was that if I put my game to 60 fps and my obs to 60 the stream will have no lag. But my question is can I not cap my game at 60 fps cause I have a 144 hz monitor and want to play at 144 fps.

Get a GPU that can handle 144fps without drops below at less than 95% GPU load, or use an fps limit below 144fps, so that your GPU can handle it.

My GPU can Handle 144 fps I get 200 in fortnite and I just want to know why when I don’t have a cap on my fps, my stream starts going down to 20 fps but when I cap my fps in game to 60 it is then buttery smooth. I want to fix it plz

Your GPU or CPU can't handle 144fps + OBS rendering, obviously, otherwise your OBS framerate would not drop.
You could upload a log file, that shows a recording/stream with those fps drops, so we can analyze the log file.
