Can I use a mini PC as a stream PC?

So I have a main PC which is good, but streaming/recording on it takes too much resources, so I thought for a second and now I wonder if it is possible to use a mini PC to create something like a Dual-PC thing to play on main PC and stream/record from the mini one.
The mini pc specs are following:
CPU: i7-8750H
GPU: UHD Graphics 630
RAM: 8Gb 2400MHz
256Gb SSD
If it's NOT possible to stream/record on something like that in 1080p60fps, then what specs should I get for a streaming PC?

As far as I can tell, Quick Sync Video does support simultaneous encodes. I use to stream with an i7 from '12 at 1080p30fps and it worked fine. Yours is 6 years newer so I hope it could handle 1080p60fps. Before buying any capture devices, you can certainly try using a video as the source.
