Unstable bitrate even with 30+mbps upload

So I've wanted to stream for awhile and finally tried for the past month. Some days would be fine but most days it were worse than others where my bitrate won't be stable at all. For the past month I thought the reason was cause I would try to stream through a power cable or if that was acting up just wifi. But as of yesterday I'm finally hardwired to the router and that nights stream was fine. Today I'm having the same issue of having unstable bitrate causing my stream to lag and end up extremely delayed. I also recently got a vpn just for layer of safety while streaming so that might affect it alittle but not to this extent I'd assume. I've tried adding a small stream delay thinking that might work but didn't seem to be anymore stable kind of glad since I don't want a stream delay. I've been looking around for an answer but I just suck at going through forums and finding something that actually helps me. While typing up this post the square seems to be going at a steady green the whole time but the log analysis says otherwise I guess. I would appreciate if anyone could help!

Connection today is acting up being alot lower than usual but my upload is still the same. The first one is without the vpn.

This second one is with the vpn.

Connection seems to be back to normal so there's another test with the VPN on

Don't use the VPN to get consisten stream connection.

Thanks I was hoping there'd be another answer but without the vpn the connection has been consistent. Any recommended vpns to use while streaming since mine seems to not be so good or just avoid VPNs while streaming in general?
