Really Bad quality on Minecraft recordings

Hi and thank you for reading this and trying to help me.
Anyways, putting this in as short words as possible I get really bad quality on my Minecraft recordings to the point where it's unwatchable at all.
I've read other people question about the same topic and most of the answers are Canvas resolution, encoder and DownScale filter related..Most of those answers were of no use to my problem. Can you please help me with my problem and find me the best recording settings.
(Btw If you can also tell me something about Bitrate recording in your reply i'd be really thankful since no one mentions them in their replies.)
Here's my most recent log : https://obsproject.com/logs/xhTqCItkYJJhNuIJ

Edit: I also wanted to Note that I don't have a fast internet connection..Pretty slow actually.
Does that affect my Recording quality or does it only affect streaming?

Only Streaming

No need to do it right away but you should think about updating Windows.

Update OBS

Update your Nvidia drivers

Disable these & Enable Game Mode
13:08:10.441: Game Bar: On
13:08:10.441: Game DVR: On

Change to 48k:
13:08:11.455: audio settings reset:
13:08:11.455: samples per sec: 44100
13:08:11.455: speakers: 2

Change your fps to 60
13:08:12.073: video settings reset:
13:08:12.073: base resolution: 1920x1080
13:08:12.073: output resolution: 1920x1080
13:08:12.073: downscale filter: Bicubic
13:08:12.073: fps: 48/1
13:08:12.073: format: NV12
13:08:12.073: YUV mode: 709/Partial

Your not dropping any frames but CBR is for streaming. Let's try to get the recording looking better, give these encode settings a shot:

If you want a smaller file, Raise the CQ Level. If you want better quality Lower the CQ.
