1. which Audio are you not capturing? I see multiple MIcs, Desktop Audio not assigned to a Track (so I'm assuming that isn't desired.. I simply disabled Desktop Audio in OBS's Global Audio settings)

I mention so you can research and see if this applies to you. Personally, I avoid adding plugins whenever possible, but I do use a couple. I mention as OBS crashes are often tied to PoS plugins (or screw-ball custom settings.. ie self-inflicted)
Then - That log is essential one log error message of your USB Video input device? That can't be helping matters. Make sure your video is working (I ALWAYS troubleshoot Audio and Video inputs outside of OBS first). Is that USB input working in other (non OBS) apps? beware OBS taking exclusive use of inputs (for good reason), so you probably should exit OBS altogether when troubleshooting as I'm describing. Does that USB Video also have Audio (ie a webcam?)
