Obs not recording screen-Stardew Valley modded

Good day, all.
I recently got into streaming and have been every day for a few weeks now without issue. Unfortunately when I decided to play Stardew Valley with the girl friend and we downloaded a bunch of mods. Now when I go to stream or record anything, if im clicked out of Stardew Valley, it will record just fine but if I click back into the game it will lock up.
I've switched from full screen to windowed and window borderless. It only works with windowed and windows (1909 and newer)
Everything I've seen so far online only works with OBS preupdate. Any help would be appreciated and im willing to provide any further details. Also, im a tech savvy guy, and work in IT. So I'm sure the fix is simple and im looking at all the complicated paths.

OBS Studio creates a log file each time you run it which contains very useful diagnostic information. Without a log file, it's much harder for any support volunteers to figure out problems and your post may be ignored.

To upload a log file, go to the Help menu > Log Files > Upload Last Log File. "Last Log File" is for the last session (the last time you ran OBS). In some cases you may be asked to select "Current Log File" instead, which is for the current session.

1. The Hardware-accelerated GPU scheduling ("HAGS") feature added Windows is currently known to cause performance and capture issues with OBS, games and overlay tools. We recommend disabling it via this screen or these instructions as a troubleshooting step. Be sure to restart after disabling it.
2. To ensure that OBS Studio has the hardware resources it needs for realtime streaming and recording, we recommend disabling the "Game DVR Background Recording" feature via these instructions.
3. Try using the NVIDIA Studio driver.
