Everything's there in the title, I've been using the same settings fo a while now, but today I have this issue and I cannot fix it.
I attached my OBS log file here.

From the log:
18:54:36.013: fps: 600/1

You set OBS to record at 600 fps. The nvenc encoder does not seem to like this.

Is the Nvidia driver up to date and is there enough free memory (VRAM and normal RAM)?
I have the latest Nvidia drivers and I have more than enough VRAM (I'm running an SLI and I have 32GB RAM)

I always record Minecraft at 600-720 FPS I never had an issue with it

There's nothing you can do except back-grade to 411.70. NVidia seems to have mucked up the NVENC DLLs or something related to the encoder in the 416.xx train if you're running SLI. I've been fighting with this since 416.16 dropped. There's no work-around at this time.
