is there any way record high quality audio while also recording video in high quality?
Whenever i use "standard" type with NVENC h.264 (new) i get amazing video recordings however the audio quality is not and i need the audio to sound high quality while i'm recording a game that is based around music, Now when i switch to "Custom Output (FFmpeg)" type with container format AVI and use the audio encoder "pcm_s16le" i basically get lossless audio and its great, However the video quality is not as great plus i have no way to convert the AVI file back to mp4 (without losing quality and/or increasing file size) for youtube upload.
i have all tracks set to 320 bitrate, 48khz and stereo.
am i doing something wrong? or is this not a simple thing to achieve?

You can try installing the CoreAudio AAC encoder for higher quality audio encoding.

This sounds more like a playback issue though as 320kbps AAC should be audibly indiscernible from lossless, have you tried a different media player?

i have viewed the final recording using windows media player - movie maker - and through YouTube on two different phones and all have the same low quality audio. i will try the AAC encoder you linked and see if it helps!

EDIT: Installing ITunes (Not from the windows store) worked and the audio is basically perfect now, thank you!
