Hey, I moved your question to its own post, should be easier and keep the thread a bit cleaner.
In general it sounds like you stressed your system a bit much with the settings, but you could for example lower the cpu usage of OBS by lowering the preset (thats in the advanced settings, superfast or ultrafast could work better).
For recording this is totally fine as it will still result in pretty much the same quality.
To help you further it coud be useful if you get us a recent log file:

To increase the quality further than our options available in the encoding settings, you can set a custom crf value. In OBS by default you can select a quality between 1 (low quality) and 10 (high quality) as soon as you deactivate "Use CBR" which you should for recordings. But these values actually represent crf values, 1 should be something around 30, and 10 is around crf=22 I think. CRF can be set between about 50 (low quality) and 10 (very high quality, and lower values might result in higher cpu usage, 0 would in theory be "lossless").

So if you want to increase your quality from the OBS options a bit further, you can go into the advanced settings. Check the option "Custom x264 encoder settings" and then you can enter "crf=15" (without the "") in the field below.
