You don't need to setup a separate source per game. All your game captured games can be set to a common baseline to fullscreen mode.
Create one Stage Scene containing one game capture as a source and set it to fullscreen mode. Call it "Scene Stage GC". Add to it only ONE game capture source and set its Mode to" capture any fullscreen application". After your game has loaded, OBS will look for fullscreen games currently running to hook into and inject itself into the game for capture.

For window capture, create one Stage Scene containing one window capture as a source. Call it "Scene Stage Window" to distinguish it from Scene Stage GC. After the game has launched, go into the Window capture property dialog and choose the executable and window title of the window you want to capture.
