Whenever I start a recording/stream, it always ends up looking quite grainy and all in all just low quality. Anyone know what is causing this? Here's my settings: https://imgur.com/a/IgwOEUU

"ultrafast" would be what is causing this. This uses the least CPU and produces the lowest quality.
I don't know what your selected framerate is, but 1080p on ultrafast with a bitrate of 3500 is almost guaranteed to look like hot garbage.
Try running the auto-configuration tool from the Tools menu.
