So I did eventually manage to apply the LUT in the end, actually.
But here's what happens:
When I click "browse" in the Apply LUT filter, the window opens up with all the LUTs, but after a second or so OBS "crashes".
What I eventually figured out is that OBS has not really crashed, and if I select the path fast enough it will still "crash" but OBS keeps running in the background, and if I just leave it up for a minute before allowing it to close then it will save the LUT settings and when I open it back up it will be applied correctly and everything will be fine!
Obviously this is not ideal, but it works.
