Here is a screen shot with the difference recording on the right and my screen on the left

I wonder if it has anything to do with your computer running OBS on the less powerful GPU?
After months of frustration and trying out the various suggestions, I was finally able to make a huge difference in the sharpness of the OBS recording by telling my computer to use the discrete graphics unit when OBS was running.
--> what a relief to see a relatively sharp image of the screen.

For text, I added an OBS filter and increased the contrast +0.2 and decreased the gamma +0.7 to improve on the sharpness of the OBS recording of the text.

To tell the PC (which was my situation) to use the discrete processor when OBS was running:

For a Mac, you could try what this person is suggesting:
The solution is to use the machine’s discrete graphics card instead.Because the discrete GPU uses more energy, I don’t want to use it when I’m on battery…
