In the future will OBS support selecting a screen region?

It already does, it is called software capture. You can pick the monitor or a sub region of what you want to capture.

Does sub region work by drag & drop in the preview window, or is the only option via setting coordinates?

It works with drag and drop, you just have to click the "Edit Sources" button first to unlock them.
