Question / Help Why is Mac so Different

Okay, forgive my naïvety, but all the help videos/screeshots shot windows users with TONES of options and settings. How come most of the menus and options dialogues in the mac 0.10.1 version of this software are empty? Are there plugins I have to install to get this thing to work??
 
Mac is so different because the version you're looking at for windows is the old windows-only version and not the multiplatform rewrite.
