I would like to know what are the best processors to perform more of streamings at once.
Currently I have an i7 3770K and I can make 2-3 streamings at once. Is there a difference with a Xeon E5-2620 V3
or maybe a I7-5930k or i7 6700k ?

If you check synthetic multicore performance, you can get in the ballpark of what each will do. x264 is very multithread friendly so these benchmarks will be more accurate than not.
from best to worse you can expect something like this: 5930K - i7 6700K - E5-2620v3 then 3770K. That being said, overclock will always give you more headroom but more (overclockable) cores will always be best.
There is one other factor. if you are downscaling your streams they will need a decent D3D11 dedicated GPU for that purpose. This process is best done on a GPU so with the standard intel iGPU, you will actually increase your CPU usage without a dedicated GPU. Skylake iGPUs and AMD APUs seems to do a pretty good job at this and would be the exception to this rule
