I wanna record a video in minecraft, but I think the video is pixelated, how can I fix that???

What´s bitrate??, and how Can I change it?

If you are only recording (not streaming also) In Settings->Output, under the Recording section, select 'Indistinguishable' as the Recording Quality. This will use quality-target based encoding, at a level that should be visually lossless.
Also, in Settings->Video, set your Downscale Resolution to 1920x1080, so no downscale occurs. Downscaling will be a quality loss, and make the resulting video look blurrier.
Also, disable 'forced scaling' in the Game Capture properties. You're downscaling multiple times at present, which will look pretty terrible.
