Video Output black bars on side

I've been messing around with OBS for a little while now and just can't seem to get a video recording output to look normal. In my project, the canvas has no black bars, but when I do a display capture I always get black bars on the side and the resolution seems off because the quality is bad of the recording. I just want to record from my monitor (which is 1920x1080) to output a video file that matches that resolution. I've gone into setting -> Video and the "Base" resolution and "Output" resolution are both 1920x1080. I've kind of at a loss.

Any ideas? I'm sure I'm just doing something stupid.

The log showing 3 intel GPUs seems odd to me? I'm guessing a laptop (due to Max-Q GPU)... is here a docking station involved? an eGPU dock?

Just curious - As you have an nVidia GPU, why aren't you using NVENC?

Yes, I'm using a dell laptop. I think that log file might be when I was plugged into a basic dock that gives me a couple more monitors (a couple of the monitors have VGA to USB adapters). I have tried a display capture without the dock and it behaves the same though.

Also, I have tried the NVENC and all the other Encoder options (Software x264, Hardware QSV). That doesn't seem to change anything.
