Sudden Encoding/Rendering Lag

Hello! I've been streaming for a few years and recently ran into an issue with OBS that I have NO idea how to solve. I'm not very tech savvy when it comes to things like this but I've been using the same hardware, settings and have never had a network issue before.

A few weeks ago I loaded up Red Dead 2 to stream, something I've done countless times with little to no issues, and the game was perfect on my end but on stream? It was like a PowerPoint slideshow. I had a massive amount of encoding and rendering lag. In the moment, I had no idea how to fix it so I just switched gears and streamed Valorant with absolutely no issues.

Today, I hoped on Fortnite to stream and same thing. I've streamed Fortnite a ton before with no issues as well. But this time I had a massive amount of encoder and rendering lag. Game was fine for me but my stream preview was horrible, friends told me my quality was very grainy and glitchy and if I tabbed out of the game, my PC would lag a bit and OBS itself was veryyyyy glitchy and laggy (audio meters skipping, cursor lagging, etc.).

I know RDR2 and Fortnite are far more intense than Valorant but I never had an issue prior to very recently. Since the last time I streamed both, I've had a GPU driver update and I believe I updated Windows and OBS. I'm assuming something in one of those updates is causing the issues.
