Software x264 low cpu preset, increase file size, working better then Nvidia NVENC?????? RTX2080TI

So I want to record in a decently high fps 240 and up, for mc frame blending, but I notice that if I am using nvenc for 240fps and above my skipped frames due to encoding lag flys through the roof. I have an rtx 2080ti, ryzen 5 3600x and 32g of ram... how is it that Nvidia nvenc doesn't work better then the Software x264 low cpu preset. Also I am on simple settings. my base canvas resolution is 2560 x 1440 but the output is 1920 x 1080. When I use the preset it allows me to record in much higher fps with 0 encoding lag whatsoever, although I haven't tested it in a game yet... but how is this possible. Ive also watched the task manager and when I use nvenc my GPU usage flys through the roof but the x264 low CPU one makes my GPU stay around 30-50... ANY HELP IS APPRECIATED!!
Any thoughts on how this is possible.

Recording above 60 FPS is generally not supported but do the following:
1. Disable Hardware-accelerated GPU scheduling ("HAGS") via these instructions.
2. Update OBS from https://obsproject.com/download old versions are not supported.
3. Run updated OBS as Admin. Right click on the OBS shortcut, properties, advanced, check box, ok, apply, ok.
4. Display Capture should only be used a last resort or if you need to capture Windows stuff. Build you scene with Game/Window/Video Device Capture. If you are going to use Display Capture, then your source is only changing 144 times per second so any OBS FPS beyond that is pointless. 5. Do not use the Max Quality preset, look-ahead and psycho visual tuning as they use additional GPU.
6. Your log contains no recording session. Results of this log analysis are limited. Please post a link to a clean log file with NVENC.
To make a clean log file, please follow these steps:

1) Restart updated OBS as Admin.
2) Start your recording for at least 30 seconds. Make sure you replicate any issues as best you can, which means having any games/apps open and captured, etc.
3) Stop your recording.
4) Select Help > Log Files > Upload Current Log File. Send that link here.
