So every time I try to record the video freezes two seconds in and the audio continues. I'm assuming it's just a settings issue and would like guidance on how to fix it.

You should post a log file, but it does sound like a misconfiguration or hardware incompatibility. Try setting up OBS using this thread: https://obsproject.com/forum/resources/official-overview-guide.6

Celeron laptop, known to not work with obs due to being a facebook-only grade processor

This is bad for video encoding. I agree with Harold.
