Why is my OBS setting showing 2 graphic cards?

You take a look into your system and if there are two graphics cards, you are running SLI :D

well thats possibly because you only have one graphics card

You should know what components you have in your computer ... just take a look in your device manager and deinstall + reinstall all old drivers.

I know what I have in my PC, I have a NVIDIA GeForce GT 640 & a Intel HD Graphics

Then the reason for your graphics card to show up twice could be that you have installed multiple/outdated/corrupted drivers.
Deinstall them using http://www.guru3d.com/files-details/display-driver-uninstaller-download.html
and install new ones from http://www.geforce.com/drivers

IF this is caused by old or faulty drivers, it can decrease performance and cause some bugs.

How would you know that your PC runs slow if you have never seen it run fast?

As far as I remember (dont have a multi-gpu laptop at hand) OBS lists 2 nvidia chips if its set to run on the Nvidia Chip.
Was there any apparent problem or where you just wondering why? In latter case you would have to ask Jim but in general you dont have to worry about it.
