Question / Help Resolution Issue when recording/streaming

Whenever I attempt to stream or record Minecraft, the video ends up looking distorted or blurred. I have it set at 1920 x 1080, which is the same as my monitor and my computer is pretty strong. The quality looks fine in the preview, but it changes when viewing as a stream or as the recorded file (pictures below):

I do not have a lot of experience with OBS so I'm really not sure how to fix this. I would appreciate any help!
 
you need at least 3500kbit video to get decent video out of 1080p. You're currently set to 1000.
