Hey just wanting to know of a good webcam to use for capturing me on my motion simulator while playing iracing etc with OBS, I actually have quite a dark room as I have a 180 degree projector curved around the room so one which works in low light would be good

Thanks

None will really work well in low light. Cameras need light to work. You'll need to invest in a lighting rig.
The Logitech c920 is the gold-standard webcam for livestreaming. Should be able to grab one for cheap on Amazon come Cyber Monday for around $50.

For low-light, you'd need to move to a larger aperture DSLR, which is going to be about 10x as expensive just for the camera, not counting glass or an HDMI capture device. Which also will be bad if you intend to mount it to the motion simulator, as they tend to be large and heavy to a point that isn't going to deal with being flung around.
Unless you mean a nightvision camera, which capture in black and white (and it doesn't sound like that's what you're after).

I wasn't going to mount the camera itself on the rig I was going to mount it on a cupboard behind looking down basically, I did look at the Logitech c920 but in my country cheapest looks around $120 unless I import otherwise is there any thoughts about the Kinect V2 Camera at all? I have one I don't use from my xbox one and I can get the windows adapter for $65 directly off Microsoft

Would you still go the Logitech c920?

I haven't used the Kinect V2 so can't really speak as to its quality. Specwise it looks similar, but that's purely theoretical.

cool I grabbed the C920 and attempted making a video, worked ok but because I have such large resolution on my projector 3840x1080 it makes the video down to 1920x540 or something when I record it to make it fit aspect wise on youtube etc
