My monitors natural resolution is 1280x1024, and I use that. I believe Twitch's is 1280x720, yes? When I try to scale my OBS to that, I tend to come back with extra space on the side of my window. Is there any way for me to get OBS to output whats on my screen to Twitch in the most optimal fashion?

The optimal solution is to just use a regular downscale and not worry about the size of Twitch's player window. Otherwise you're going to squish your output, which will look like complete crap. Or you can crop some of it, but this is also sub-optimal unless you just don't want to show some parts of your screen.

So here's the thing, twitch enforces 16:9 aspect ratio, so if it looks great on your screen, it probably doesn't on mine. so if you set it to 720p, you should be fine (as a viewer is concerned.)
