why does OBS not put what i recorded into one file but put it to many files

I record over an hour, 10-11GB file, and it is a single MKV file on a Win10 NTFS NVMe drive
Did you configure OBS to break recording file up?
Or, are you recording to a file system (like FAT) that doesn't support larger files?

You probably set the output format to HLS (m3u8).
