Question / Help Quality drop after changing computer

I used to stream (Xbox 360) regularly on my laptop in decent quality. I wanted to change from a laptop to a desktop PC, however I know very little, so had a friend of mine help me out. He choose out some parts for me and built the computer which all works great, however when streaming my quality has dropped considerably.

I believe my OBS settings are practically the same as how they were previously (will post Images), however when streaming the quality is pretty awful. I can stream Gamecube w/ HD facecam just fine, but when I try my 360 it looks kind of poor, and the Xbox One looks even worse.

These are the specs of my Laptop, and the new Computer:

Laptop:

CPU: Intel® Core™ i5-4288U Processor (2.6 GHz, 3.1 GHz with TurboBoost, 3 MB cache)

RAM: 8 GB DDR3L

GPU: Intel® Iris™ HD Graphics 5100

HDD: 1.5 TB (5400 rpm SATA)

New Desktop:

CPU: AMD A8-6600K APU with Radeon HD Graphics (3.9GHz)

RAM: 8GB

GPU: AMD Radeon R7 200

HDD: 240GB SSD

Essentially I am asking if there are any major differences that would cause this significant drop in quality, either from settings or PC specs, and if so is there a solution? For example upgrading a component.

Apologies if this seems at all dumb, I have very limited knowledge with computers.

Thanks

(Also as a side note, I can remember when streaming months ago on the laptop, when I changed from 360 to One there was a big drop in quality. I simply adjusted something and it fixed the problem completely, any idea what I might have done? Just thought i'd throw it out there.)
