I have tracked my last log. It was slightly better this time in terms of video, there was still lag there but not as mush as previously. However Audio was pretty bad, very jittery almost as if there was interference which there never is normally.

I feel your pain. I experienced the same issue when experimenting with Blackhole. For some reason the streamed audio quality was "crunched" a bit like applying a bitcrusher effect. Not good.
Note: I use iMac, DDJ1000 and OBS
Long story short I ended up sticking to using iShowU Audio Capture software instead and the audio quality of the stream was immaculate. The setup using iShowU is identical to the setup using Blackhole. Full disclosure, I have a 150mbps download / 50mbps upload connection so the speed of my internet connection was definitely not at fault.

Edit: Thanks to the sped of my connection I'm streaming the video at 8M and the audio at 320kbps on OBS. Depending on your speed I would recommend testing lower res first and then increase little by little until you get the ideal compromise between quality and the limits of your connection.
