Question / Help Obs recordings come out poorly

Alright so I recently downloaded obs, but whenever I record something it comes out either

Stuttery @ 1080p 30fps
and
Somewhat Slighty Pixelated (Not Crisp) at 720p 30fps

I'm not sure what to change

{If you need any more information, sorry for not providing it before hand I'm still new to this. And please tell me so I can update the post. Also my intentions are only for recording and not live-streaming}
