I've tried streaming and recording multiple games, and every time I try, it freezes up but the Audio from my mic and game continue to carry on. Help please?!

first lets get you back to a baseline:
change audio to AAC
for to no more than 60 (30 would be more ideal once you actually get a picture up there) for 2200bitrate
set x264 preset to veryfast
make a new scene and add a game capture all default options besides fit to screen then set it to the java app you are running (minecraft?)
and preview , do you see it there?

It's not freezing in the preview, And it's not freezing whilst i'm recording! Thank you so much!
720p @120fps faster preset could be to much for your encoder. with local recording only there is no reason to have to use a preset lower than veryfast. infact, I recommend superfast then setting the buffer to 0, uncheck CBR. this will give you unlimited bitrate for the encoder to use, which is ideal for local recording only.
do the changed I recommeded then record for 5 minutes while moving around in game as you normally would. post that log here.

Also, since you are local recording, change your profile to high and you can go higher with your quality balance, somewhere between 8-10. it can go higher but its up to you to know what looks best for your recordings.
