You seem to have no idea what advanced output / custom ffmpeg output is for. To save you much hassle and all the issues with that output mode, I recommend you just call Tools > Auto Configuration Wizard and follow the instructions. This will detect your hardware capabilities and performance and will create a working configuration for simple output mode. And stay with simple output mode. It uses the same encoders and quality as every other output mode. It's just with a simpler UI interface with just the crucial decisions exposed, and all the others internally coded with best practice values developed over the years.
