Minecraft recording issues

I have a lot of problems recording minecraft with obs. The main one being, the recording lags and stutters so much, whereas while im recording there is virtually no lag.
i'm really confused as to why this keeps happening, and am open to any suggestions. thanks a lot for any help!

Sorry for the late reply once again, but my recordings still lag a lot. This does help, but not as much as I was hoping.

Change the output resolution to 1280x720.

I'm really confused. While I recorded this, the output of the video looked 720p, and I made sure to change the OBS resolution to 1280x720.
 
Is there a way to make OBS always launch with 1280x720p resolution? Because currently, I have to change it whenever I open up OBS
