Ah, okay, then I apologize for not having understood the problem. Perhaps there's something wrong with your application data where it's not letting you save your profile information. Would you mind it if I recommended clearing out all your OBS settings?
If you wish to try it, then first, close OBS. Then you can do it by pressing Windows Key + R, pasting in:
%appdata%\obs
Then simply delete the files within (or move then somewhere else if you wish to back them up), which will reset all of your settings. I suppose it's worth a shot. Such a thing you're experiencing is extremely unusual, I have to admit I don't know why such a thing would be happening and I theorize that you somehow lost permissions to that folder somehow (no clue why or how though, but it's happened on extremely rare occasions to other people in the past somehow, still have no idea how)
