Low Quality/Choppy recordings

I have been trying to record clips on Rocket League and no matter what, the outcome is always low quality or choppy despite max settings. What can I change to increase the quality of the recordings? Any help is appreciated.

CPU: AMD Ryzen 5 3600x
Ram: 16gb Corsair
Graphics: GTX Geforce GTX 1060 6gb

First few things: Update OBS and Windows Run OBS as Admin
Make sure your audio is all the same sample rate
Limit your games FPS to 60 or 120, so it's not maxing out the GPU While NVENC is a separate encoder chip it does use a little of the card's memory and bandwidth So, the game needs to leave a small amount of headroom for that
