Question / Help Is My PC Able To Record? (PC Specs and FPS Tests Included)

For the longest time I've tried everything I possible can to solve the issue, but I can't find anything to help. Testing my computer's capabilities with various games, I have the average FPS of the following games:

Skyrim (High graphics preset. Capped at 60): ~60
Minecraft (Highest graphics settings possible, with Optifine. Not capped.): ~180
Borderlands 2 (Highest graphics settings possible. Capped at 60.): ~60
Audiosurf 2 (Highest graphics settings possible, using a variety of themes. Capped at 60.): ~60
Rocket League (Mid-range graphics settings. Massive difference in the grass detail levels.): ~60; Highest settings: ~25

So these are five games I used to test my computer's performance with graphics intensive games, and for the most part it can handle just about anything I throw at it. When I try to record at 720p settings, the highest FPS I will get in most of these games is 3-5. Along with this, OBS's frame rate will plummet downwards, sometimes matching the FPS of what it's recording. I am constantly getting a "WARNING: High Encoding" message down beside my time. I have tried absolutely everything including reading a couple of the pinned posts at the top of this section of the forum, and I cannot find any way through. Any suggestions or further suggested options for OBS would be great! (Keep in mind, I'm not trying to stream. I'm simply trying to record and save it as a file. Streaming would be great, but I am taking this one step at a time.)
