Depends on the situation, but above about 20 cores (including hyperthreading) it starts getting into sync issues keeping up with frame rendering.

Also, depending on your recording or streaming settings, you may not use more than about 5 cores out of something like the http://ark.intel.com/products/82930...ssor-Extreme-Edition-20M-Cache-up-to-3_50-GHz even at 1080p60 using one of the slower sounding presets.
so if i wanted to use the slowest (best) preset how many cores would i need ? thanks

I haven't experimented with it yet, but you need fewer cores on a dedicated streaming rig that has a capture card like the blackmagic intensity pro 4k (I recommend using obs multiplatform with that card) than you do on a rig that is also running the games.

Good luck, man. Hopefully you're either partnered, or not trying to stream to Twitch.
1080p at all there requires bitrate well above the range non-partners can reasonably use, and 1080@60 needs rates that close in on 'banned as a denial-of-service attack' territory.

I'd advise dual 10 or 12-cores if money is no object, with the highest core clockspeed you can get, leaning toward more clockspeed at that point as 2 extra cores aren't going to make up for an extra 500MHz across the board.

dont intend on 1080@60 just want to be able to squeeze every last bit of quality by using lowest preset, so if i need a xeon with 10+ cores to use that preset then thats what ill go for (old one obviously, im not made of money, lol)

Not true at all. I stream Gears of War Ultimate Edition at 1080p60 all the time with 3500 bitrate, and it looks perfectly fine.
