how do I record and not stream and can you edit your recording please help

You can keep the mode on livestream and just activate the save to file checkbox, set a filepath and filename. Or you can switch to file output only mode and set a filepath and filename: http://jp9000.github.io/OBS/settings/broadcastsettings.html

For later editing you will need an external software, for example sony vegas or windows movie maker ;)
