There are PC games that I can't make windowed. I'm wondering how I set OBS to capture those because I don't see how I'd do it while the game's open.
How do I record a full screen game that I can't make windowed?

Game capture will also capture fullscreen games, as well as display capture. You will not be able to see the OBS preview, but OBS will still capture. You can use hotkeys to start/stop recording while in the game, configure in OBS settings->Hotkeys.
In case the game resolution is different to the Windows desktop resolution, you might need to adjust settings->Video->Base (canvas) resolution to the actual game resolution.
Best thing would be of course to get a second monitor and run OBS on the second monitor to see its preview.
