I lowered the resolution, and I got it to record for 7 seconds. The screen was constantly glitchy, and probably 5 fps

Looking through your log

Code:
21:35:49.135: [game-capture: 'minecraft'] attempting to hook process: javaw.exe
21:35:49.167: [game-capture: 'minecraft'] capture stopped
21:35:53.168: [game-capture: 'minecraft'] attempting to hook process: javaw.exe
21:35:53.201: [game-capture: 'minecraft'] capture stopped
21:35:57.202: [game-capture: 'minecraft'] attempting to hook process: javaw.exe
21:35:57.234: [game-capture: 'minecraft'] capture stopped
21:36:01.235: [game-capture: 'minecraft'] attempting to hook process: javaw.exe
...then this

21:37:26.304: ==== Recording Stop ================================================

OBS is failing to use the encoder and having a frame drop of 81.6% so it stops recording.

Searching this forum this looks like your problem:

and this is a possible solution:

Apparently OBS does not like capturing Minecraft.

Good luck.
