Desire no scaling, Base (Canvas) & Output (Canvas) are 1920x1080

I see it has a Downscale Filter of Bicubic (Sharpened scaling, 16 samples), but I thought having identical values for the resolution settings would cause the downscale to be ignored.

I used FancyZones to create a zone exactly 1920x1080 so I can move windows into there and then add them in obs, they should be the exact correct resolution.

Yet I always end up with a resolution which is not as clear as on my screen, the letters are just ever so slightly fuzzy.

How can I get actual resolution?

It's still the basic install as far as I can remember, so default settings in OBS, whenever I tested something I changed them back when they didn't help.

Also I am using scaling in windows at 125%, if that matters, I've been searching other posts and so far haven't found one where someone said the windows scaling causes blurry letters, so I'm assuming that's not the issue.

I just noticed in the preview, if I drag that off the window so it zooms in, the quality there is exactly what's being recorded, and its slightly blurry ... why is it showing as slightly blurry even there? The source should be exactly 1920x1080 so I'd expect an exact match ...

You can make screenshot of the source, right-click menu over the source Screenshot (Source). Screenshot includes all filters for the source, so remove them if there any. Screenshot is good start point for comparison of the pictures.

Images looks like 1 or 2 pixels difference that was scaled up/down. Can be border of the windowed sources (if captured).

If you need to know captured (original) size of the source - you can Reset Transform for the selected source (Ctrl + R), after this you can see real size of the source in the Transform window, Edit Transform (Ctrl + E). This gives you raw numbers at Size field.

As for the, Canvas and Output settings, if sizes are equal - no scaling applied. Also, modern OBS disables the Downscaling Filter field to not confuse users if both sizes matches.
