Okay, just did another hour of testing. So if I have it capture a PS2 game, it's fine. If I have it so much as look at the menu icon for a PS3 game, it crashes. If I have it capture a PC game (I tested with Civ5 and Evil Genius) it works fine. If I add my webcam, it crashes.
Part of it I think are performance issues as my processor is getting quite old and I'm replacing it this week. On one hand I do tons of CPU heavy things every day and it works fine. I render HD video many times week. On the other hand, that would explain why it's not as strong as it used to be, assuming that's the issue.
Regardless of if it's the CPU or not, that doesn't account for it instantly crashing if I show a PS3 game to the capture card while OBS is open. I'll test again as soon as the new Intel Core i7-3770K is in, however I have no idea what to expect at this point.
