which obs studio do I need to use and configure to run any console with a capture card or recording on it without any problems?

That CPU is weak sauce, unfortunately I see nothing but problems in your future. You're going to want to use v27.2.4, it's the last version that supports your iGPU. Update the iGPU driver if it's older than what is available.

And this color problem, do I need to use the blue male to male USB 3.0 cable to transfer data from the console with the capture card to the laptop? Console PlayStation 2 and Xbox 360
