I usually record my footage when playing a game and only after I updated OBS did I start encountering frame drop issues. I play Rainbow Six Siege and in the game menu, OBS preview will show that it's recording as normal, I will minimize the window and play a game. But once I end the recording and play it back, the recording is either extremely choppy or unviewable at almost < 5 fps. I am new to OBS and have watched the guides on how to set it up as a beginner but haven't had these issues previously until the update.
*I did run a folding software in the background but didn't have issue before. But as a troubleshoot, I have minimized how much resource it uses, and finally stopped having that run in the background.*

i7-8700k
EVGA 1080SC
16gb 3200mhz
Not sure if it matters but:
1tb m.2 ssd to play the game
2tb HDD to store video
