I struggle in a related area, so I'm by no means a subject matter expert. Here is what I know (worth less than $0.02)

You have possibly 2 things to consider
1. Getting audio out of the mixer and available to Windows OS (not OBS, that's next)
The solution to this is mixer dependent. Some mixers have Dante or USB for digital audio output of each channel (or a selective/main mix from the board). Some mixers have a USB connection and you need to use something like ASIO drivers to access from OS. Then some mixers have their own drivers/Digital Audio Workstation (DAW) s/w to get audio from mixer to PC. But beware, some DAW's don't play nice with Windows OS Audio, and you may need to use something like a physical or virtual loopback adapter, or some like Reaper's Reastream VST plugin.

Important note - none of the above has ANYTHING to do with OBS. You may (or probably won't) find help for your specific mixer in this forum. ymmv. Forums dedicated to that mixer or likely better sources of info on addressing having the mixer's audio output available to the Operating System

2. Once audio visible to OS, then these OBS Audio related articles may help
side note: The CoreAudio AAC encoder may provide an audio quality improvement over the built-in OBS AAC encoder. If you'd like to install CA, it's quite easy. Here's a guide: https://obsproject.com/forum/resources/obs-studio-enable-coreaudio-aac-encoder-windows.220/
