I am not able to record any apps from bluestacks. Obs captures the "welcome" part of bluestacks but if i switch to android or a game i just get a black screen.

When i try to use xsplit i have got the same problem. I could capture the "welcome" part but nothing else.

try anticheat hook or a window capture with compatibility mode enabled.

Anitcheat wont change anything but window mode works. But i would like to capture it wihout the menu. If i could capture the game it wouldnt show the menu.

Use subregion. not all programs will work with game capture even though that is often the best choice. often emulators do not consider the need for a d3d or openGL based hook.

Other youtuber are able to game capture bluestacks. But the window mode + sub region works fine. Thanks for your help!

If you wish to do what they do then you need to ask exactly how they do it. Telling me someone else can do it but you cant doesn't help anything but I'm glad you got it working.
