Audio Doubling (all sources coming through Desktop) + recording issues

Pretty sure I've been dealing with this through my time with both SLOBS and OBS, but my audio always tends to go through both their source and my desktop in recordings. For instance, I was playing Life is Strange on stream. I have the recording set for the alert notifications to be on a different track. When I went to edit the videos, the alert sounds were also coming through the desktop audio. This happens with console audio as well as when I'm streaming a game on my ps5. I have to mute the desktop audio to stop audio doubling. How am I to fix this once and for all? I'd love to get this fixed as I'm finally switching back to OBS after hearing of the stuff Streamlabs did.

On a slightly related note, I've also had problems in the past with audio on the stream simply not playing at all unless, in the advanced audio settings, all audio sources are checked on track 1. Now I'm sure I'm just dumb and not understanding exactly how it works, but it's just annoying that when I record something and edit it later, I always have to edit out the track that contains every source so I can then edit the other tracks with their individual audio sources. If I have to have it so that they all go through the stream, I understand that, but I'm not sure that's the case. If someone could explain that to me like I'm 5 that would be great.
