OBS is meant for video recording / streaming.
If you want to only record audio Audacity is a better solution for you.

I set up OBS by only recording audio by going to File -> Settings -> Output, chose Advanced mode, opening Recording tab, choosing Custom Output (FFmpeg), and choosing mp3 as the container, while making sure that Video encoder is off.

But however, once I set up and tried to record, this message appears, which is decently annoying.

How do I force OBS to find encoder 'mp3'?

You can't. OBS always records video and expect to encode a video.
If you want to only record audio use Audacity. It's free and incredible feature full.

@PaiSand you can most definitely record only audio from an app by disabling video encoding in the Advanced settings.

@whatiamdoing Did you find a solution for this problem? I can record by using the wav encoder, but with mp3 I get the same problem as you.

You can use a program specialized on audio recording and get high quality audio or you can keep using a program which main purpose is recording and streaming video.
And please do not tag me again on old threads unless you need actual help with OBS.
