Even backing down the recording framerate to 30fps and bitrate to 25MBps doesn't help...

Doing that actually makes it worse. It's still very choppy and killing the bitrate like that makes it look like a mud puddle.

You might have to downscale to 1920x1080. Also it's essential that you enable custom buffer size to 0, did you do that?

Then you most likely didn't follow the instructions, or you set your quality target too low. Please post a new log from a recording attempt that uses the settings in that guide.
