What version of OBS should I install if I want it to work on my Windows 7 PC?

Windows 7 is end-of-life, no longer officially supported, and is below the minimum requirements as a result.

It may work, it may not; we can only advise upgrading to a modern, supported version of Windows as far as assistance. Anything else is at-your-risk and unsupported if you run into issues.

Last known version of OBS Studio that supports Windows 7 was v26.1.1 (the recording will work).
